Do You Have to Track Calories Forever?

Tracking is a measuring instrument, not a diet. Its value falls as portions become familiar. Here is the arithmetic, the error bands, and when to stop.

A calorie log is a measuring instrument. Instruments have a calibration, a resolution, and a range over which they are worth the effort. The question is not whether tracking works, but whether the thing being measured has stopped changing enough to justify the measurement.

Maintenance for a 35-year-old woman, 165 cm, 68 kg, sedentary, is about 1,700 kcal by Mifflin-St Jeor. That figure carries a standard error near 10%, so the plausible band is roughly 1,530-1,870 kcal. A food log that resolves to the nearest 50 kcal is measuring inside a band that is already 340 kcal wide. The instrument is finer than the target.

What the numbers on a label actually are

A nutrition label is not a measurement of the food in front of you. It is a calculation from a database, using average values, with permitted tolerances.

The Atwater factors are averages of averages. They were derived in the late 19th century from bomb calorimetry and nitrogen balance, and they are applied to every food on every label. For a mixed diet they are accurate to within a few percent. For a single food they can be off by 20% or more. Almonds are the standard example: the Atwater calculation gives about 170 kcal per 28 g, but measured metabolisable energy is closer to 130 kcal, because the cell walls do not fully break down.

Recovering the real figure from a label

The label gives you a number and a serving size. The serving size is the manufacturer’s choice, not a recommendation. To recover the per-gram figure, divide.

Label: 150 kcal per 30 g serving
Step 1: 150 / 30 = 5.0 kcal per gram
Step 2: Weigh the actual portion. Say 47 g.
Step 3: 47 * 5.0 = 235 kcal

If the label is at the top of its ±20% tolerance, the true value for that 47 g portion lies between 188 and 282 kcal. That is a 94 kcal spread on a single item. Three such items in a day, and the log has a 280 kcal error band before any logging mistake.

This is not an argument for distrust. It is an argument for weighing rather than estimating, because weighing removes the largest error term: the portion. The label tolerance is fixed and unavoidable. The portion error is not.

Why tracking stops paying

The value of a measurement is the reduction in uncertainty it produces, divided by its cost. Early on, portion estimation is poor. A person asked to serve 40 g of dry oats without a scale will typically serve between 60 and 90 g, because a “serving” is a bowl, and a bowl is not 40 g. Weighing cuts that error from perhaps ±50% to ±2%.

After a few months of weighing the same twenty foods, the error in estimation falls. The person who has weighed oats two hundred times can pour 40 g within a few grams. The measurement now reduces uncertainty by 3%, not 50%. The cost - time, attention, the arithmetic - has not fallen. The ratio has inverted.

This is the point at which tracking stops being useful. It is not a failure of discipline. It is the instrument working as intended and then becoming redundant.

What to do instead

Anchor on a small set of weighed staples. Five to ten foods that make up most of the diet, weighed until the portion is known without the scale. Oats, rice, chicken, oil, milk, bread. These are the foods where a 20% portion error translates to 100 kcal or more.

Spot-check rather than log. Weigh one day a week, or one meal a day, and compare the estimate to the scale. If the estimate is within 10%, the instrument is still calibrated. If it drifts, weigh more often for a week.

Let the rest go. Vegetables, black coffee, most condiments, and anything under 20 kcal per portion are below the resolution of the log. Tracking them adds noise, not signal.

When tracking is the problem

Tracking is not harmless for everyone. The signs that it has become the problem rather than the tool are specific.

  • The log drives the eating, rather than describing it. A food is chosen because it fits the remaining budget, not because it is wanted or needed.
  • A day without logging produces anxiety disproportionate to the event.
  • The number on the log is treated as a measurement of the day’s worth, not the day’s intake.
  • Eating out, or eating food prepared by someone else, is avoided because the number cannot be entered.
  • The log is used to justify intake below 1,200 kcal for women or 1,500 kcal for men. These are not targets. They are the threshold below which a diet cannot reliably meet micronutrient needs without clinical supervision.

For a person with a history of disordered eating, or with a current diagnosis, tracking is a clinical question and not a general one. The arithmetic on this page does not apply to that situation. A clinician does.

The transition

The honest position is that tracking is a tool with a learning curve, and the curve flattens. The goal is not to track forever. The goal is to internalise the portions that matter, and to keep a scale in the kitchen for the foods where estimation fails.

Intuitive eating and tracking are not opposites. Intuition about portions is built by measuring portions. The person who has never weighed a portion has intuition about hunger, which is useful, and intuition about grams, which is not. The two are separate skills.

A reasonable endpoint: weigh the staples, estimate the rest, and spot-check when the weight trend moves in a direction that was not intended. The scale in the kitchen is the calibration standard. The log is the training wheels. Neither is a permanent feature of the diet, and neither is a moral failing to put down.
